Oven Baked Fish & Sweet Potato wedges

Oven 200C Line baking sheet with baking paper
serves 4

Fish

500g White Fish Fillet
80g Breadcrumbs
2 tsp Lime zest
2 Tbsp Plain Flour
2 Egg whites

Garnish: Lime Wedges


1. Combine: 80g Breadcrumbs & 2 tsp Lime zest
2. Toss fish in 2 Tbsp Plain Flour
3. Dip fish in 2 Egg whites-
4. Completely coat with breadcrumb mix
5. Place on lined tray & Bake in oven 10-15 minutes or until cooked through
6.  Garnish & Serve with Sweet Potato Wedges

Sweet Potato Wedges

500g Sweet Potato cut into thin wedges
2 tsp Paprika
Spray oil

1. Place 500g Sweet Potato cut into thin wedges on baking tray.
2. Spray potatoes lightly with oil
3. Sprinkle potatoes with Paprika
4. Bake for 30 minutes turning occasionally or until tender & golden
