Quick Cook Veg Soup

Using Pressure cooker and blending with Vitamix

Cook together:

400g ish Diced pumpkin (pre-diced cut packets available from supermarkets)
x1 bunch of broccolini roughly chopped
x2 Carrots roughly cubed
x1 Litre of chicken stock
x1 tsp Ground Cumin spice
optional : Sprinkle of Tuscan seasoning (Masterfoods)

Blend up with a Handful of fresh Coriander leaves

Garnish with:

Ground black pepper & salt
Dollop of Sour Cream & freshly chopped coriander leaves

  1. Brown vegetables all over with the Brown setting - this step can be skipped
  2. Place all ingredients into pressure cooker on high for 15 minutes.
  3. Transfer to Vitamix and blend with the handful of fresh coriander leaves.
  4. Transfer to bowls, garnish and serve.
